Aji de Gallina
Aji de Gallina, a traditional Peruvian dish, comfort food at its best! A mix between chicken stew and chicken curry, poached chicken slathered in a spicy and creamy nut-based sauce served over white rice. Main ingredient: Aji Amarillo, the King of the Peruvian peppers, nowadays easy to find online, in latin stores and now grown here in Asheville! This dish is hearty, filling and delicious, and will leave your guests wanting a second serving!
